Growing Instructions
Growing mini bell peppers is very similar to growing standard bell peppers with a few advantages. Sow seeds directly into the soil if growing in a container. Otherwise, it's recommended to start seeds indoors 6–8 weeks before your last frost date since peppers germinate slowly. Transplant seedlings outside once nights stay above 55° and the soil is warm. Choose a location with full sun and rich, well-drained soil. These plants stay relatively small, so they’re ideal for raised beds or containers. Space them about 12–16 inches apart, and consider staking the plants because a heavy fruit set can weigh down branches despite the plant’s small stature. Keep the soil consistently watered and evenly moist but not waterlogged to prevent blossom-end rot and support continuous flowering.
Harvest, Storage, and Use
Harvest mini bell peppers when they turn fully yellow and glossy. You can pick them green as well, but allowing them to ripen to yellow gives the sweetest flavor and most vitamins. Typically, peppers will be ready about 60–70 days after planting. Use scissors or pruners to cut the peppers off the plant leaving a short stem attached to avoid breaking the branches.
The peppers have thick, crunchy walls and a sweet, mild flavor with no heat. Enjoy them fresh as snacks, slice them into salads for a pop of color, or stuff them with cheese or hummus for bite-sized hors d'oeuvres. They also sauté and roast well. Stored fresh, unwashed peppers will keep in the refrigerator crisper for about a week or two. If you have a big harvest, you can pickle them (whole or sliced) to make tangy pepper rings, or chop and freeze extras for later use in cooked dishes.
